CHRISTMAS CAKE

Ingredients to marinate the fruit:

• 200 gr of fruits candied • 100 gr of raisins • 100 gr plums • 100 gr Fig • 100 gr cherries • 100 ml of Spirit of Ecuador

Ingredients for cake:

• 240 gr flour • 210 gr Brown sugar • 240 gr of butter • 600 gr fruit macerated • 4 eggs • 100 gr macadamia nuts • 100 gr almonds • 100 gr of walnuts • 10 gr of powder baking • 60 ml Spirit of Ecuador

Preparation of the macerated fruit:

Chop all ingredients and place in a glass container, add the Spirit of Ecuador and leave in maceration for 2 weeks to be used to prepare the cake.

Cake preparation:

Chop the macadamia nuts, almonds and walnuts into small pieces, place them in a saucepan with butter, the brown sugar and the Spirit of Ecuador, take everything to cook until the sugar melts and simmer for 5 more minutes.

Place eggs in a mixer and whip until foam, join the two preparations and mix gently, sift the flour and mix with powder baking, add the flour to the previous preparation and mix gently.

Place mixture into a greased and floured aluminum mold, lead to the preheated oven at 170 degrees, bake for 55 minutes, remove from the oven and let cool, remove from pan and serve.
